Perfect Cup Basics

COFFEE     

Water:  98% of coffee is water

-          Fresh, cool filtered water

-          Temp:

o   200 degrees F

o   (Boiling water cools at a rate of 5-10 degrees F for every 30 sec, so let boiling water sit at least 30 seconds before using)

Grind:  Always grind fresh and use the proper grind setting: Coarse <>Fine

Proportion:  Most methods require 2tbs-6 to 8 oz of Water

-          Too little coffee = over extraction and BITTERNESS

-          Too much coffee = under extraction  and ASTRINGENT  NOTES

TEA

Water: Fresh Cool Filtered

-          Bring water to proper temperature for desired tea

o   (Boiling water cools at a rate of 5-10 degrees F for every 30 sec, so let boiling water sit for the appropriate amount of time for the tea being used before adding the teabag/diffuser)

Tea:  1 tsp loose tea/1 tea bag  - 6 to 8 oz of water

Steep Time:  Allow tea to dwell for the proper amount of time
